National Folic Acid Awareness Week

Today marks the start of National Folic Acid Awareness Week. This crucial chemical found in leafy green vegetables and enriched pasta is an essential ingredient the human body needs to produce new red blood cells. It is especially important for proper fetal development, making folic acid indispensable for pregnant women.

What's more, folic may be the most affable acid. I mean sulfuric acid is just too scary to be allowed in polite society, while no one enjoys when lactic acid makes his presence felt at an athletic event. And don't even get me started on that diva acetic acid, who demands that everyone call him by his Hollywood stage name "vinegar".  That guy thinks he's the bee's knees of organic chemicals.  But folic acid isn't in it for the fame, he just keeps his head down and gets to work preventing birth defects. And it's that combination of humility and hard work that makes folic acid deserving of a week of appreciation.
